9 Medium potatoes, diced
5 Ounces baby spinach leaves
1 Medium red onion, finely diced
2 (14 oz) Cans chicken broth
1/2 Cup water (maybe a little less... I like it thicker)
1/4 Teaspoon cayenne pepper
1/2 Teaspoon salt
1/4 Teaspoon pepper
2 1/2 Cups shredded smoked Gouda cheese, divided
1 Can evaporated milk

Instructions

Add potatoes, spinach, onion, cayenne, water, salt and pepper and chicken broth to crockpot. Cover and simmer on LOW 10 hours. Smash up potatoes some and add 2 cups Gouda and evaporated milk. Cook covered on HIGH another 20 minutes. Serve hot, sprinkle with remaining Gouda cheese in each bowl ... garnish with whatever you like: green onions, bacon, ham, etc.
