Ingredients
1 1/2 Pounds chicken thighs, boneless, skinless
3 Medium carrots, peeled & diced
3 Celery stalks, diced
1 Medium onion, diced
3 Garlic cloves, minced
6 Cups chicken broth
1 Cup water
2 Bay leaves
2 Teaspoons Italian seasoning, or more to taste
2 Cups cheese tortellini
Salt & pepper to taste
Fresh parsley, for garnish, if desired
Instructions
Add all of the ingredients to a crockpot except for the tortellini.
Cook on LOW for 5 - 6 hours.
Remove the cooked chicken from the crockpot and shred or cube and add back to the pot.
Add the tortellini and cook for 15 minutes or until they are cooked through.
Season with salt and pepper to taste, discard bay leaves and serve with chopped parsley, if desired.
