Ingredients
2 (5 oz) Cans solid white albacore, in water
1/2 Cup mayonnaise
2 Celery stalks, finely diced
1/2 Cup sharp cheddar cheese, shredded
4 Tablespoons sweet pickle relish
2 Tablespoon onion, finely diced
2 Green onion, finely diced
2 Teaspoon lemon juice
Dash of salt
Dash of garlic powder
Dash of onion powder
Dash of lemon pepper
8 Slices bread, toasted
Lettuce, optional
Instructions
Drain the tuna in a strainer in the sink. In a medium bowl, combine all the ingredients, except the bread. Mix with a fork until thoroughly combined.
Serve on the bread with lettuce, if desired.
NOTES
You can also throw some cheddar cheese on top of an open-faced tuna sandwich and broil it until the cheese melts. Then, put the other slice of bread on top for a fantastic tuna melt.
