Ingredients
1 1/2 Cups water
1 1/2 Cups minute rice
2 Eggs, beaten
3 Tablespoons butter
1/3 Cup onion, chopped
3 Tablespoons soy sauce
1 (4 ounce) Can mushrooms, drained
Instructions
Bring 1 cup of water to boil in a saucepan, stir in rice. Remove from heat, cover and let stand for 5 minutes. Meanwhile cook eggs in butter in a 10" skillet, until set. Add onion and rice and mushrooms and cook over medium heat until rice and onion are slightly browned, about 5 minutes. Combine 1/2 cup water and soy sauce, stir into rice.
