Ingredients

3 Chicken thighs, boneless, skinless
2 (11 oz) Cans Niblets corn, drained
1 (1 1/4 oz) Packet taco seasoning
2 (15 oz) Cans black beans, drained
1 (24 oz) Jar chunky salsa
Fresh cilantro to taste, chopped
1 Cup sharp cheddar cheese, grated
Sour cream
2 Green onions, diced

Instructions

Lightly spray crock with non-stick cooking spray. Put corn in bottom of crockpot. Place chicken on top of corn. Sprinkle chicken with taco seasoning. Pour in salsa. Pour beans over salsa.
Cook on LOW for 5 to 6 hours. Remove chicken pieces and dice. Return to crockpot and add cilantro. Before serving transfer to oven-proof serving dish and top with cheese. Put in oven to melt.
Top with sour cream and diced green onion to serve.
