Ingredients

1 1/2 Pounds boneless & skinless chicken thighs, cubed
1 1/2 Cups frozen corn kernels
1 Cup chicken broth
1 Cup medium salsa
1 (19 oz) Can black beans
1 Tablespoon chili powder
3/4 Cup long grain rice
Toppings
4 Cups iceberg or green curly lettuce, thinly sliced
1 Cup cheddar cheese, grated
1 Tomato, diced
1 Avocado, sprinkled with lemon juice & diced
1/4 Cup cilantro leaves
Sour Cream

Instructions

Chicken
In the pressure cooker, combine the chicken, corn, broth, salsa, black beans & chili powder, season to taste with salt & pepper. Sprinkle in the rice without stirring.
Cover the pressure cooker & select the Poultry function. Set the machine to cook for 10 minutes. Adjust the seasoning.
To Serve
Serve the chicken mixture in bowls garnished with lettuce, cheese, tomato, avocado & cilantro.
