Ingredients
1 Pound ground eye of round beef
2 Cups instant long grain white rice
1 (16 oz) Jar salsa
2 Cups vegetable juice
1 (16 oz) Bag coleslaw mix (cabbage and carrots)
2 (14 1/2 oz) Cans stewed tomatoes
Instructions
Spray crockpot with nonfat cooking spray. In cooker, mix together the beef, rice, salsa, vegetable juice, and coleslaw. (Remove large pieces of cabbage). Cover and cook on high for 4 hours. When ready to serve, heat stewed tomatoes in microwave until they are heated through. Evenly pour tomatoes over each serving.
