Ingredients
1 1/2 Pounds lean ground beef
1 (14 1/2 oz) Can diced tomatoes with Jalapenos, do not drain
1 (4 oz) Can diced/chopped green chile peppers
2 (15 oz) Cans kidney beans
2 Cups water
1 Package Taco seasoning mix
1 Package Hidden Valley Ranch dressing mix
1 Cup frozen corn
Tortilla chips
Cheddar cheese, grated
Instructions
Brown beef and remove excess fat. In soup pot or crockpot, add browned ground beef and all remaining soup ingredients.
If cooking on stove, simmer for 45 minutes to one hour.
If cooking in a crockpot, cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours.
If cooking in a pressure cooker, cook at pressure for 15 to 20 minutes. Let pressure reduce naturally.
To serve
Crush a handful of tortilla chips and place in bottom of bowl. Top with Beefy Tortilla Soup. Sprinkle on the shredded cheese of your choice and a dollop of sour cream.
