Ingredients

1 Cup unsalted butter, room temperature (DO NOT MELT)
2 Large eggs, room temperature
3/4 Cup confectioners� sugar, plus more for rolling
3/4 Teaspoon salt
1 1/2 Cups finely ground blanched almonds
5 Teaspoons vanilla extract
1 Teaspoon almond extract
3 Cups all-purpose flour, sifted

Instructions

Preheat oven to 325�F.
Cream butter & eggs in a bowl, gradually add confectioners� sugar and salt. Beat until light and fluffy.
Add almonds, vanilla and almond extract.
Blend in flour gradually and mix well.
Shape into balls or crescents using 1 teaspoon for each cookie.
Place on ungreased cookie sheet, and bake for 15 minutes. Do not brown.
Cool slightly and then roll in the extra confectioners� sugar.
