Ingredients

1/2 Tablespoon olive oil
1/2 Pound chicken thighs
1/2 Pound smoked sausage, sliced into 1" pieces
1 1/2 Cups of heavy cream
2 Cups chicken broth
2 Tablespoons butter
1 Tablespoons coarse Cajun seasoning
1 Garlic clove, crushed
1/2 Pound of uncooked penne pasta
1/4 Cup hot water
2 1/2 Ounces freshly shredded parmesan cheese
Kosher salt & black pepper, to taste
Garlic powder

Instructions

Pat chicken dry and season with salt, pepper and garlic powder. Heat olive oil over high heat and quickly sear chicken on both sides.
Add chicken, sausage, heavy cream, chicken broth, butter, crushed garlic and 1/2 teaspoon of kosher salt, Cajun seasoning and ground black pepper to crockpot.
Cook on LOW for about 4 hours or HIGH for 2 - 3 hours.
Remove chicken from crockpot and set aside to cool and slice.
Stir in 1/2 cup of hot water and uncooked penne pasta, cover and cook on high for about 30 minutes, until pasta is tender.
Once pasta is tender, stir in parmesan cheese, sliced chicken and additional salt and black pepper to taste.
