Ingredients

1 Cup sugar
1 1/3 Cups flour
1/4 Teaspoon salt
1 1/3 Teaspoons baking powder
1 1/3 Teaspoons baking soda
1 1/3 Teaspoons cinnamon
1/2 Teaspoon cloves
1/2 Teaspoon allspice
1/2 Cup walnuts, chopped
1 Cup ginger ale
3 Eggs
2 Cups grated carrots

Instructions

Spray spring form pan with non-stick spray. Mix sugar, ginger ale and eggs. Add the dry ingredients to the wet mixture and stir well. Fold in two cups of grated carrots and 1 cup chopped walnuts. Pour mixture into spring-form pan and place the pan onto the steam rack.
Add 1 1/2 cups water into the base and cook (valve open) on high heat for 10 minutes.
Reduce heat to medium. Add 1-1/2 C. water to the base. Cook (valve closed) for another 10 minutes.
Raise heat to maximum. Add 1-1/2 C. water into the base. Cook (valve open) for another 10 minutes.
Insert toothpick into cake to check for doneness. Remove pan from Turbo Cooker and allow to cool When cooled, turn onto plate to decorate.
