Ingredients
1 (32 oz) Can tomato juice
1 (14 1/2 oz) Can pureed tomatoes
2 Cups water
2 Potatoes, peeled & chopped
1 (15 oz) Can garbanzo beans, drained
1(15 oz) Can kidney beans, drained
1 Cup lentils, rinsed & drained
1 Large onion, chopped
2 Teaspoons garlic powder
1 Cup red bell pepper, chopped
1 Cup green bell pepper, chopped
10 Ounces frozen broccoli
2 Carrots, grated
2 Tablespoons dried parsley
2 Tablespoons chili powder
2 Teaspoons dried basil
1 Teaspoon ground cumin
Instructions
Combine all ingredients and bring to a boil, reduce heat & simmer, covered for 30 to 45 minutes or until lentils are tender. Sprinkle each serving with Parmesan cheese, if desired.
