Ingredients
8 Cups baby spinach leaves
1 Small carrot, peeled & shredded
1 Cup sweet onion, sliced thin
1/4 Cup bacon bits
1/3 Cup pineapple juice, unsweetened
2 Tablespoons vinegar
1 Tablespoon olive oil
2 Teaspoons soy sauce
1 Teaspoon dry mustard
1/2 Teaspoon curry powder
Salt & pepper to taste
4 Eggs, hard boiled & sliced thin
Instructions
Combine spinach, carrot, onion and bacon bits in a large bowl. Combine pineapple juice, vinegar, olive oil, soy sauce, dry mustard, curry powder, salt and pepper in a small saucepan. Bring to a boil and then pour over lettuce mixture. Toss well and garnish with egg slices. Serve immediately.
