Ingredients

1 Large head broccoli, trimmed & cut into spears
2 Tablespoons vegetable oil
2 Tablespoons unsalted butter
2 Shallots, peeled & sliced
2 Garlic cloves, peeled & sliced
1 Tomato, seeded & chopped
1 Teaspoon sugar

Instructions

In saucepot bring broccoli and enough salted water to cover to a boil. Cook 3 minutes drain. Rinse with cold water.
In skillet cook oil and butter until butter is melted. Add shallots, garlic and tomatoes, cook mixture 3 minutes or until softened. Add sugar and cooked broccoli, cook 3 minutes or until broccoli is crisp tender. Season with salt and pepper, if desired, then serve.
