Ingredients

1 (10 oz) Package frozen lima beans
2 Tablespoons butter
4 Bacon strips, chopped
1 Small red onion, chopped
1 Green bell pepper, chopped
4 Cups frozen corn
1/2 Cup chicken broth
3/4 Teaspoon salt
1/2 Teaspoon pepper
1/2 Cup heavy cream
1 Cup cherry tomatoes, halved
1/2 Cup flat leaf parsley, chopped
Chives for garnish

Instructions

Steam lima beans until crisp/tender, set aside.
Melt butter in large skillet and cook bacon until it starts to brown. Stir in red onion and bell pepper and cook for 10 minutes.
Add corn, chicken broth, salt, pepper and lima beans. Bring to a simmer and cook uncovered for 5 minutes. Stir in heavy cream, tomatoes and parsley and heat through.
Serve garnished with chop parsley.
