Ingredients
2 English cucumbers, finely sliced
1 Teaspoon salt
1/2 Teaspoon freshly-ground pepper
1 Teaspoon freshly dill, chopped
OR
1/2 Teaspoon dried dill weed
1/2 Cup red onion, sliced paper-thin
1 Cup red wine vinegar
4 Teaspoons honey
Instructions
Place the sliced cucumbers in a bowl, sprinkle with salt, pepper & dill, mixing well. Mix in the onion slices.
Heat the vinegar in a small saucepan just until hot, but not boiling. Remove from heat & add the honey, stirring until it dissolves. Let this mixture cool to lukewarm.
Pour over the cucumber mixture. Cover & refrigerate overnight.
