Ingredients
1 Can beer
2 Cans water
1 Carrot, diced
1 Onion, chopped
1 Green or red pepper, chopped
1 Jalapeno pepper
1/2 Pound of ham hocks or ham, chopped
Instructions
In a heavy pot and add 1 can of beer and 2 cups of water, bring to a boil, reduce heat and simmer for 45 minutes or so. Meanwhile, rinse your greens and remove the thick stems.
Roll about a dozen greens together and cut the bunch into cross-wise sections about 1/2� thick.
I use 3 to 4 bunches of greens depending on how big each bunch is. Rinse greens well with cold water then add to the liquid and stir. Bring back to a boil and add some sausage to taste. Cook over low heat until tender, usually about 2 to 3 hours.
