Ingredients
1 Head cauliflower or 2 Packages frozen cauliflower
Boiling water
4 Tablespoons olive oil
1 Garlic clove, minced
1/2 Teaspoon salt
1 Cup tomatoes, peeled & chopped
1/4 Cup Parmesan cheese
Fresh parsley, chopped
Instructions
Cook cauliflower in small amount of boiling water, covered, for 10 minutes.
Heat oil in skillet and saut� garlic, add tomatoes, salt and well-drained cauliflower.
Sprinkle with Parmesan cheese.
Garnish with chopped parsley when served.
