Ingredients

3 Cups carrots, shredded
2 Cups rice, cooked
1 1/2 Cups cheddar cheese, shredded
1 1/2 Cups milk
2 Eggs, beaten
2 Tablespoons onion, minced
1 Teaspoon salt
1/4 Teaspoon pepper
1/2 Cup processed cheese, shredded

Instructions

Combine carrots, rice, 1 1/2 cups cheddar cheese, milk and eggs. Stir in onion, salt and pepper. Pour mixture into a greased 1 1/2 quart casserole dish. Sprinkle with remaining 1/2 cup of cheese. Bake at 350�F for 50 to 60 minutes.
