Ingredients
1 1/2 Pounds Brussels sprouts, trimmed
4 Bacon slices
1 Red bell pepper, seeded & cut into strips
1 Shallot, peeled and sliced
Instructions
Remove and separate leaves from Brussels sprouts. In skillet, cook bacon until crisp, turning often. Drain and cool on paper towels, coarsely chop. Remove and discard all but 2 tablespoons drippings. In same skillet, combine Brussels sprouts leaves, bell peppers, shallots and 1/4 cup water. Cover and cook 6 minutes or until tender. Season with salt and pepper to taste. Top with chopped bacon and serve.
