Ingredients

2 Tablespoons onion, minced
3 Tablespoons butter
2 Tablespoons flour
1 1/2 Cups beet juice or water
1/2 Teaspoon salt
1 1/2 Teaspoons granulated sugar
3 Tablespoons vinegar
3 Cups hot beets, sliced

Instructions

Saut� onion in butter until tender; add flour and blend. Add beet juice or water, salt, sugar and vinegar and cook until thickened. Add beets.
