Ingredients
1 Large onion, chopped
1/4 Cup butter or margarine
3 Medium sweet potatoes, pealed & chopped
3 Medium zucchini, chopped
1 Bunch broccoli, chopped
2 Quarts chicken broth
2 Medium potatoes, pealed & shredded
2 Tablespoons celery seed
1 Teaspoon ground cumin
1 Teaspoon pepper
2 Cups light cream
Instructions
In a large pot saut� onion in butter until transparent; add sweet potatoes, zucchini and broccoli. Saut� an additional 5 minutes then add broth and simmer for a few minutes. Add potatoes and cook until all vegetables are tender. Stir in cream and heat through.
