Ingredients
1 Large onion, chopped
1 Pound mushrooms, chopped
2 Medium zucchini, sliced
3 Garlic cloves, crushed
1 Tablespoon olive oil
1 (16 oz) Bag frozen vegetables
32 Ounces vegetable or chicken stock
1 (28 oz) Can diced stewed tomatoes
1 Tablespoon Mrs. Dash seasoning mix
Instructions
Saut� mushrooms in oil. When mostly cooked, add onion, zucchini and garlic and saut� until crisp-tender. Add mixed vegetables, stock & tomatoes. Heat on high until boiling. When pot boils remove from heat, add Mrs. Dash seasoning and let cool slightly.
