Ingredients
2 (14 1/2 oz) Cans diced tomatoes
2 Cups chicken broth
1 Cup water
1/4 Cup celery with leaves, chopped
Fresh parsley, chopped
1/2 Bay leaf, crumbled
1/2 Teaspoon salt
1/8 Teaspoon pepper
1/2 Cup uncooked long grain rice
Instructions
Bring tomatoes, broth, water, celery and seasonings to a boil in a large saucepan. Add rice and cook 25 minutes or until rice is tender. Taste and add more salt and pepper as desired.
