Ingredients

4 Cups beef broth
4 Small red potatoes, peeled, coarsely diced
2 Medium carrots, peeled, thinly sliced
1 Small onion, chopped
1 Celery stalk, thinly sliced
2 Large tomatoes, peeled, seeded, coarsely chopped
1 (15 oz) Can stewed tomatoes
1 (2 oz) Can tomato paste
1/4 Cup elbow macaroni, uncooked
1 (10 oz) Package mixed frozen vegetables
1 (15 oz) Can great northern beans
2 Slices fried bacon, crumbled
Salt & ground black pepper to taste

Instructions

Preheat Nesco� Roaster Oven to 375�F.
Add broth and fresh vegetables into preheated cookwell. Cover; cook 10 minutes. Add stewed tomatoes, tomato paste and macaroni. Cover; cook 20 minutes. Add remaining ingredients. Reduce temperature to 300�F. Cover; cook 30 to 45 minutes or until macaroni is tender and soup is heated through.
