Ingredients
3 Large bunches green onions
1 Pound fresh mushrooms
3 Tablespoons margarine
Salt & white pepper to taste
1/8 Teaspoon cayenne pepper
3 Tablespoons flour
5 Cups chicken broth
1 Cup water
1/3 Cup plain yogurt
OR
1/3 Cup sour cream
2 Green onions, thinly sliced
Instructions
Coarsely chop 3 bunches green onions. Chop 3/4 pound of the mushrooms; set aside. In large pot coated with nonstick cooking spray, melt margarine. Add green onions, salt and white pepper and cayenne. Reduce heat, cover and cook for 10 minutes, stirring occasionally. Add flour. Gradually stir in chicken broth and water cooking until soup comes to a boil. Reduce heat and cook for 10 minutes longer. Add chopped mushrooms and heat one minute. Puree soup in food processor in batches if necessary. Slice remaining 1/4 pound mushrooms. In small pan, coated with cooking spray, saut� sliced mushrooms until tender. To serve soup: ladle into bowl and top with yogurt or sour cream, saut�ed mushrooms and sliced green onions.
