Ingredients

1 Onion, finely chopped
1 Garlic clove, chopped
2 Tablespoons butter
5 Cups chicken broth
4 Cups chopped celery
1 Potato, peeled & diced
4 Cups fresh spinach, trimmed
Salt & pepper to taste

Instructions

In a large saucepan, soften the onion & garlic in the butter.
Add the broth, celery & potato. Bring to a boil. Cover the saucepan & simmer gently for about 20 minutes or until the vegetables are tender.
In a blender, puree the soup until smooth along with the spinach, season to taste with salt & pepper.
