Ingredients
1 Cup Orecchiette ear shaped pasta
1 (14 1/2 oz) Can stewed tomatoes
1 (15 oz) Can cannellini beans, rinsed
1 Quart chicken stock
4 Garlic cloves, finely chopped
1 Onion, finely chopped
1/2 Pound hot Italian sausage
1/2 Pound sweet Italian sausage
2 Tablespoons olive or vegetable oil
Ice water
1 Bunch broccoli rabe, cut into pieces
Salt to taste
Black pepper to taste
Shaved pecorino Romano or Parmesan cheese
Instructions
In a pot bring a few inches water to a boil, salt it, add broccoli and cook 5 minutes. Drain and plunge into a bowl of ice water, drain again.
In a pot, heat 2 tablespoons oil. Add sausage, break up meat and cook until browned. Add onion and garlic and cook to soften. Add stock, beans, tomatoes and 1 cup water, season with salt and pepper. Cover pot and bring to a boil. Stir in pasta, lower heat and simmer until al dente. Turn off heat and stir in broccoli. Top stoup with cheese and serve.
