Ingredients
4 - 6 Cups broccoli flowerettes
2 Cans chicken broth
6 Bacon slices, crisp cooked, chopped fine
1/2 Cup red onion, chopped
1/2 Cup heavy cream
1 Package Knorr or McCormick hollandaise sauce mix
1 Teaspoon salt
1/2 Teaspoon fresh ground black pepper
1/2 Teaspoon ground thyme
Instructions
In a 2 quart sauce pan boil broccoli in the chicken broth until fork tender, remove from heat and cool.
Add contents of hollandaise sauce package and onion to broccoli & broth before blending in a blender; OR use an immersion blender and blend the hot soup in the sauce pan. Blend to a texture that suits your taste.
Add salt, pepper, and thyme.
Add bacon, heavy cream and simmer until the soup thickens.
Serve with crusty toasted French, Pugalese or Asiago bread.
