Ingredients
2 Pounds potatoes, peeled & cut into 2" chunks
3 Leeks, white & light green parts only sliced into 2" slices
1 Medium onion, chunked
2 Ounce butter
8 Ounces water
1 1/2 Cups chicken stock
1 Dash salt
1 Dash pepper
2 Tablespoons fresh chives for garnish
Instructions
Put potatoes, leeks, onion, butter and the half-pint of water in a large microwaveable bowl. Cover and microwave on high for 20 minutes.
Have the hot stock ready and add to the cooked vegetables. Cook for a further 5 minutes, and then add salt and pepper to taste.
Blend till smooth in blender.
