Ingredients
6 Potatoes, cubed
2 Onions, finely chopped
1 Carrot, finely chopped
2 Stalks celery, chopped fine
5 Cubes of chicken bullion
1 Teaspoon parsley
2 Quarts water
1 Tablespoon salt
1 Teaspoon pepper
1/2 Cup butter
1 Can evaporated milk (save for later)
Instructions
Combine all ingredients except milk and cook for one hour. Then in a bowl combine and mix:
2 Cups flour
1 Egg
1 Cup milk
1 Teaspoon salt
Drop flour, egg, milk and salt mixture by teaspoon into boiling soup. Cook for 45 minutes then take off heat, add evaporated milk, and serve. Adding about 1 to 1 1/2 cups finely chopped ham or fried bacon would make this a meal in itself.
