Ingredients

2/3 Cup butter
2/3 Cup flour
8 Cups milk
4 Cups baking potatoes, baked, cooled, peeled & cubed
4 Green onions, sliced
12 Bacon strips, cooked & crumbled
1 1/4 Cups shredded cheddar cheese
1 Cup sour cream
3/4 Teaspoon salt
1/2 Teaspoon pepper

Instructions

In large soup kettle or Dutch oven, melt butter. Stir in flour and continue cooking and stirring until smooth. Gradually add the milk, stirring continuously until thickened.
Add potatoes and onions and bring to a boil, stirring continuously. Reduce heat and simmer for 10 minutes.
Add remaining ingredients, stir until cheese is melted and sour cream is incorporated. Serve immediately.
