Ingredients

5 Strips bacon, chopped
1/4 Cup chop fresh parsley, stems removed
1 Medium onion, diced
1 Clove garlic, minced
1 Bay leaf
1/2 Cup flour
1 Pound potatoes, baked & diced
2 Cups chicken broth
Salt and pepper to taste
2 Cups half & half
Shredded cheddar
Chopped fresh chives

Instructions

In large pot, brown chopped bacon. Remove bacon and set aside for garnish. In remaining grease, saut� diced onion and garlic.
Stir in flour and reduce heat to low. Simmer 5 minutes, stirring.
Add chicken broth, parsley and bay leaf, continue simmering until soup begins to thicken.
In another pot, heat half & half until hot, do not boil. Add hot half & half to soup and stir. Stir in cooked potatoes, salt and pepper to taste.
Garnish soup with cheddar, chives and bacon bits.
