Ingredients

10 Slices extra-lean bacon
1/2 Cup real bacon bits
1 Medium onion, diced small
1 Cup frozen mixed vegetables
1/2 Bag frozen green peas
1 Bag frozen baby lima beans
1 Can Rotel tomatoes and green chilies
1 Can corn Niblets with juice
1 Can mushrooms
2 Cans chicken broth
Salt & pepper to taste
1 Teaspoon garlic powder
1/2 Cup fresh chopped cilantro (1 Tablespoon dried)

Instructions

Brown the bacon, drain and reserve the bacon grease. Tear bacon into bite-sized pieces. Combine all frozen veggies into a Dutch oven and toss with 2 tablespoons of the bacon grease. After 2 minutes add the remaining ingredients, bring to a rolling boil, and reduce to a simmer, cook for 45 minutes and serve with your favorite warm bread.
