Ingredients
2 Cups chicken broth
1 Bell pepper, finely diced
1 Cup smooth peanut butter
1 Cup peanuts, finely chopped
1 Cup whole milk
1/2 Garlic clove, minced
1/3 Stick salted butter
1/4 Teaspoon salt
1/4 Teaspoon pepper
1/4 Teaspoon oregano
1 Ounce parsley
1/2 Medium onion, diced
Instructions
In a large pan place the water and add the onion, garlic, salt, black pepper, oregano, bell pepper and parsley. Cook over medium heat for 8 to 10 minutes before adding the remainder of the ingredients and reducing to low heat. Stirring frequently, cook the peanut soup for another 25 to 30 minutes until creamy in consistency.
