Ingredients
3/4 Cup whole barley
2 Celery stalks, finely diced
1 Onion, finely diced
1/2 cup finely diced carrots
1 Tomato, finely diced
3 Garlic cloves, finely chopped
4 Cups chicken broth
2 Cups water
1 Teaspoon fresh ginger, finely chopped
1/4 Cup green onions, chopped
1 Teaspoon avocado oil or cooking oil
1 Teaspoon dried thyme
Salt & pepper
Instructions
Heat oil in a large pot over medium heat, add ginger and garlic and saut� until fragrant, about 2 minutes.
Add onions and saut� until lightly golden brown.
Add all the remaining ingredients except green onions and let it boil. Simmer on low heat for about 30 minutes or until the barley is tender.
Garnish with green onions and serve warm.
