Ingredients
1 Small onion, chopped
2 Pounds chicken thighs
1 Can nacho cheese soup
3 Cans chicken broth
2 Cans cream of chicken soup
2 Cans cream of mushroom soup
3 Cans Rotel diced tomato and green chili, 1 mild and 2 hot
1 Pound Velveeta cheese
2 1/2 Cups milk
1/2 Stick butter
2 Tablespoons cilantro
5 Flour tortillas, cut into bite size pieces
Instructions
Saut� chopped onion in one tablespoon butter until tender. Add remaining ingredients and bring to a boil. Simmer for 20 minutes. Add cut tortillas during the last 5 minutes of cooking. Serve with crushed Tortilla chips, diced tomatoes, shredded cheese and green onions.
