Ingredients
1/2 Pound chicken breasts, cut into bite sized pieces
1 Teaspoon olive oil
1 (15 1/2 oz) Can chicken broth
1 (15 1/2 oz) Can crushed tomatoes
1 1/2 Cups water
2 Cups frozen mixed vegetables
1 (2/3 oz) Envelope Italian salad dressing mix
1/2 Cup instant rice, uncooked
2 Tablespoons chopped fresh parsley
Instructions
In a large saucepan over medium high heat, cook chicken in oil until cooked through; about 5 minutes. Add broth, tomatoes, water, vegetables and salad dressing mix. Bring to boil. Reduce heat to low; cover. Simmer 5 minutes. Stir in rice and parsley; cover. Remove from heat and let stand 5 minutes.
