Ingredients

2 Teaspoons olive oil
1 Small onion, chopped
2 Cloves garlic, minced
1/2 Pound fresh spinach, washed & chopped
3 Cups chicken broth
1 Cup whole tomatoes, drained & chopped
1/2 Pound boneless, skinless, chicken breasts, cut into 1/2" pieces
1 Cup small shell macaroni, cooked
Salt & pepper, to taste
4 Tablespoons grated Parmesan cheese

Instructions

In a large pot over medium-high heat, heat the oil. Add the onion and garlic and saut� for 4 minutes. Add the spinach and cook for 2 minutes until the spinach is wilted. Add the broth and tomatoes and bring it to a boil. Lower the heat and simmer 15 minutes. Add the chicken and simmer for 5 minutes more until chicken is cooked through. Add the cooked shells and season with salt and pepper. Top each soup bowl with Parmesan cheese.
