Ingredients
1 Cup broccoli, chopped
1 Cup carrots, chopped
1 Cup onion, chopped
1 Red bell pepper, chopped
3 Garlic cloves, pressed
Dash of black pepper
1 (14 1/2 oz) Can chicken broth
2 Cups cooked chicken, diced
1 (16 oz) Jar Alfredo sauce
1 Tablespoon fresh basil, snipped
Instructions
Place broccoli, carrots, onion, bell pepper and garlic in stockpot; salt & pepper to taste, add broth and bring to boil, cover and let simmer until tender. Add chicken and Alfredo sauce; simmer until heated through, approx 5 minutes.
Remove from heat; add basil. Serve with freshly grated Parmesan cheese if desired.
