Ingredients

1 Pound lean ground beef
5 Cups water
2 Cups potatoes, peeled & cubed
1 Cup cabbage, shredded
1 Cup onion, chopped
2 Beef bouillon cubes
1 Cup celery, sliced
1 Cup carrot, sliced
1/3 Cup pearl barley
1 1/2 Teaspoons salt
1/2 Teaspoon dried basil
1/2 Teaspoon dried thyme
1/4 Teaspoon pepper
1 Bay leaf
1 (28 oz) Can tomatoes with liquid, cut up
1 (16 oz) Can cut green beans, undrained
1 (10 oz) Package frozen spinach, chopped

Instructions

In a Dutch oven or soup kettle, brown ground beef; drain. Stir in remaining ingredients except spinach; bring to a boil. Reduce heat; cover and simmer 40 minutes. Add spinach; cover and simmer an additional 15 minutes. Stir to blend spinach into soup. Remove bay leaf before serving.
