Ingredients
1 Small onion, chopped
2 (15 oz) Cans Cannellini or great northern beans, un-drained
1/2 (3 oz) Jar real bacon bits
2 (4 oz) Cans mushroom stems & pieces, un-drained
2 (14 oz) Cans chicken broth
1 Packet Italian dressing mix
Instructions
Cook chopped onions in large sprayed nonstick soup pan 2 minutes over medium heat, stirring constantly. Add remaining ingredients and mix well. Bring to a boil. Lower heat, cover and simmer 20 minutes.
Any kind of white beans or even a combo of two kinds can be used in this recipe. Only use half the jar of real bacon bits. Sprinkle the rest on top of each serving or in a salad.
