Ingredients

1 1/2 Quarts water
1 Cup large dry lima beans
2 Teaspoons salt
2 Slices bacon
1/2 Cup onion, chopped
1 Stalk celery, coarsely chopped
1 Medium carrot
1 Cup canned tomatoes

Instructions

Bring water to a rolling boil; slowly stir in rinsed limas. Add salt and boil gently for 1 1/2 to 2 hours, or until limas are tender. Cut bacon into 1/4� slices and fry until crisp. Remove bacon, add onion to fat, cover and cook slowly until transparent. Slice celery and carrot. Add celery, carrots, tomatoes and onion to limas and simmer 15 to 20 minutes. Add crisp bacon and serve.
