Ingredients
1 Tablespoons + 2 teaspoons extra virgin olive oil
1 Medium onion, chopped
2 Garlic cloves, minced
6 Cups chicken broth
1 1/2 Cups small bowtie pasta
2 (16 oz) Cans cannellini beans (large white beans), rinsed & drained
1 (14 1/2 oz) Can diced tomatoes with juice
1/2 Cup parsley, chopped
1/4 Cup Grated parmesan cheese
Instructions
Heat 1 tablespoon oil in a 3 quart sauce pan over medium-high heat; add onions and saut� 5 minutes or until light gold. Add garlic and cook, stirring for one minute.
Add broth and bring to a boil. Add pasta and cook 5 minutes.
Stir in beans & tomatoes; cook 4 minutes or until pasta is tender. Remove from heat.
Stir in parsley and remaining 2 teaspoons oil.
