Ingredients
1 Onion, chopped
2 Cloves, minced
1 Tablespoon canola oil
2 Cups chicken broth, divided
3 (14 1/2 oz) Cans black beans, rinsed & drained, divided
1 (10 1/2 oz) Can diced tomatoes with green chilies, undrained
1 Teaspoon ground cumin
1/2 Teaspoon garlic salt
Garnish
Cilantro, minced
Instructions
In large saucepan, saut� onion and garlic in oil for 3 minutes, or until tender. In blender, combine 1/2 cup chicken broth and 15 ounces black beans. Cover and process until smooth. Add to onion mixture. Stir in tomatoes, cumin, garlic salt, remaining beans and remaining broth. Bring to boil. Reduce heat. Cover and simmer for 10 minutes. Serve with cilantro for garnish.
