Ingredients
1/3 Cup extra virgin olive oil
1/3 Cup white wine vinegar
Salt & pepper to taste
1 Teaspoon dried thyme
2 (15 oz) Cans cannelloni beans, rinsed & rained
2 Garlic cloves, minced
2 Fennel bulbs, sliced
1/3 Cup blue cheese, crumbled
Parsley for garnish
Instructions
Combine all the above ingredients in a large bowl & chill for several hours before serving.
