Ingredients
3 Medium ripe tomatoes
1/4 Cup basil leaves, chopped
2 Tablespoons olive oil
1/2 Small red onion, thinly sliced
1 to 2 Tablespoons mild red wine vinegar
Coarse kosher salt to taste
Instructions
Cut each tomato into large chunks. Mix with basil, oil, onion, if using, and vinegar. Add salt. Let stand, tossing occasionally for 30 to 60 minutes, serve.
