Ingredients
1 Pound Rotini pasta
2 Tablespoons olive oil
1 Cup ranch dressing
1/2 Cup mayonnaise
Juice from 2 lemons
1 Red onion, finely diced
3 Tablespoons fresh basil, chopped
OR
1 Tablespoon Italian seasoning
1 Teaspoon white pepper
1 Cup canned corn, drained
3 Medium tomatoes, seeded & diced
1/2 Orange bell pepper, diced
1/2 Cup marinated artichoke hearts, chopped
6 Bacon slices, cooked & diced
Instructions
Cook pasta in generously salted boiling water according to package directions. Drain, toss with olive oil and set aside.
Combine dressing ingredients in a large bowl. Add pasta to bowl and toss to mix. Fold in corn, tomatoes and bell pepper.
Top with bacon to serve (or refrigerate up to 6 hours, then add bacon to serve).
