Ingredients
2 (3 oz) Packages sugar-free lemon-flavored gelatin
3 Cups water, divide
1/3 Cup vinegar
2 Tablespoons lemon juice
2 Cups cabbage, shredded
1/2 Cup carrots, shredded
1/2 Cup celery, chopped
1/2 Cup green pepper, chopped
Garnish: mayonnaise
Instructions
Combine lemon gelatin and 2 cups boiling water in a mixing bowl. Stir to completely dissolve gelatin. Stir in remaining 1 cup cold water, vinegar, and lemon juice.
Chill mixture for 30 minutes. Fold in vegetables and turn mixture into a 6-cup mold or an S-inch square dish. Chill until set, at least 1 1/2 hours. Place molded salad on a plate lined with lettuce. Garnish with reduced-fat mayonnaise at serving time.
