Ingredients
8 Ounces fresh mushrooms, sliced
2 Cups cooked rice, chilled
1 Cup fresh tomatoes, diced
1/2 Cup red onion, chopped
1/2 Cup green pepper, chopped
1/2 Cup mayonnaise
1 Tablespoon lemon juice
1/2 Teaspoon salt
1/4 Teaspoon bottled hot sauce
8 Lettuce leaves
Chopped parsley for garnish
Instructions
Mix all ingredients except lettuce and parsley in large bowl. Chill at least 1 hour. Serve on lettuce leaves and top with chopped parsley.
